Saturdays - Curried Onions

curried onions recipe tutorial

I love pickled onions in all the variations and so I am going to share a great recipe which I like to make to use up bulk onions when I have them or buy them. This is a curry, sweet-sour kind of pickled onion and it takes 4 days to make.

For this recipe you will need:

1- 1.5kg onions
1/2 Cup Salt
2 Cups white wine vinegar
2 Cups water
2 Cups sugar
3 tsp Curry powder
1 tsp Peppercorns

Day 1: Slice the onions very finely, place in a bowl and cover with salt. Stir to cover all the onions, and then cover with a lid allowing to stand.

Day 2: Pour off liquid and rinse the onions thoroughly, place back in the bowl. Place all other ingredients in a pot and bring to the boil. Pour, still hot, over the onions and cover. Allow to stand.

Day 3: Pour the liquid back into a pot and bring to the boil again. Again pour, hot, over the onions and allow to stand.

Day 4: Place all the ingredients in a pot, bring to the boil and fill into sterilized bottles.

There you have it.
Great to eat with cheese, raclette, or if you are like me, consume on their own - yummy :)

  1. Will definitely be trying this recipe. How long will it keep? I'm thinking yummy with winter raclette - can't face hot melted cheese in the summer. My husband came grocery shopping with me today and said to make sure we got everything to make more of your sandwich spread! I served it up at a family bbq a few days ago, with corn bread hot from the oven and my neice's boyfriend, who is a chef, want's both recipes for his restaurant! Currently making a friendship cake, do you know of them? Wish you lived closer so I could include you in the sharing out day! Pouring with rain today - great for the garden but kids going stir crazy! Chocolate & coconut balls are this afternoons activity!
How are things in the garden?

    1. Hi Emma,
Thanks so much for your comment, it really made my day :)
I am so glad that you enjoy the recipes, I will try to keep them coming!
Yes, I have heard of friendship bread - I once had a "Herman" that you also had to feed each day and then share out on the 10th day, it was cool in the begining but after a while I did get tired of him though :(.
Have a great rest of your week.
      Thanks for visiting.
